From a Home screen, navigate:

Settings

From the Accounts section, tap the Exchange Activesync account.
Tap
Settings
then tap the appropriate account (located below General).
If needed, engage your Exchange / IT admin to configure the following:
Account name
Data usage settings
Notification settings
Server settings (password, domain, etc.)
Signature settings
Sync frequency settings
